Unity Diabetes Center Launches Vegan Cooking Class to Manage Diabetes, Other Health Conditions
Rochester, N.Y. (January 27, 2011) - A new class will be offered by the Unity Diabetes Center starting in February – Seeds of Change, a low fat vegan approach to manage diabetes, high cholesterol, weight gain, and hypertension.
Seeds of Change consists of four, two-hour sessions that demonstrate vegan low fat meal plans, cooking instruction, recipes, and tips. Participants also are provided with strategies for grocery shopping, dining out, and maintaining a balanced approach to a healthier lifestyle.
“Diabetes management diets typically call for portion control, limits in carbohydrates, and calorie restriction,” said Joy Valvano, clinical diabetes educator at the Unity Diabetes Center. “A low fat, plant based diet offers an alternative approach without weighing or measuring foods.”
A vegan diet program helps eliminate fatty foods, meat, dairy products, and oils from a diet and introduce whole grains, legumes, fruits, and vegetables.
Classes will be held on February 2, 9, 16, and 23 from 6 - 8 p.m. at the Unity Diabetes Center, Unity at Ridgeway, 2655 Ridgeway Avenue, Suite 220. The cost of the class is $120 per person, and includes cooking demonstration, samples and a start-up kit. The class is led by registered dietitians and certified diabetes educators.
